Ingredients:
Dough: Very delicious cake on kefir "New Year's Night"
- 0.5 liters of 1% kefir
- 2 tsp of soda
- 2 cups of flour
- 8 tbsp of cocoa
Frosting:
- 2 cups of sugar
- 2 eggs
- 2 cups of milk
- 2 tbsp of flour
- 1.5 cups of sugar
- 2 eggs
- 100 g of butter.
Method of preparation:
Layers:
1. In warm kefir add soda, sifted flour, sugar, beat in 2 eggs and mix thoroughly. There is no need to extinguish the soda, it will be perfectly neutralized by the acidity of the kefir. The dough will be liquid, like for pancakes, so you can mix it with a mixer. In the finished dough, add cocoa to taste – from 4 to 8 tablespoons and mix thoroughly again. To prevent the cocoa from clumping, it can be sifted through a sieve.
2. Cut parchment paper to fit the bottom of the form, grease the edges with butter and sprinkle with breadcrumbs or semolina – so that the layers do not stick. Pour the dough to a thickness of 1 cm. Bake at 175°C. Depending on the diameter of your form, you will get a different number of layers.
Frosting:
1. Beat the eggs into a strong foam, add a little milk and 2 tbsp of flour, beat again. Boil the remaining milk with sugar and reduce the heat to a minimum. In a thin stream, constantly stirring, pour the egg-flour mixture into the boiling sweet milk.
2. Continue stirring, especially thoroughly at the bottom, until the frosting thickens. This usually takes 5–7 minutes.
3. The frosting needs to cool to room temperature, and the butter, accordingly, should be warmed to room temperature.
4. Mix the warm butter into the cooled frosting until completely homogeneous.
Now just spread the frosting on the layers and let it soak for at least 4 hours.
Optionally, the top of the cake can be decorated.
