Chocolate-banana pastry lovers will really enjoy this roll. It is made very quickly!
Ingredients:
Dough:
6 eggs
6 tablespoons of sugar
3 tablespoons of cocoa
1/2 teaspoon of baking soda
Filling:
200 ml of milk
2 tablespoons of flour
250 g of room temperature butter
1 egg
8 g of vanilla sugar
2 tablespoons of cocoa
4 tablespoons of powdered sugar
2 bananas (long and straight)
Butter for greasing the baking sheets
Cocoa for sprinkling
Preparation:
Preheat the oven to 180°C. Grease a baking sheet (35 x 25 cm) with butter and line it with parchment paper.
Separate the yolks from the whites, beat the latter until stiff peaks form. Beat the yolks with sugar for about 10 minutes, add cocoa and baking soda. Gently fold in the egg whites into the yolks. Pour the batter onto the prepared baking sheet.

Bake for 7-10 minutes, then transfer the sponge cake onto a damp kitchen towel, roll it up and leave it to cool with the towel. When the roll has cooled, unroll it and remove the paper.

Put the milk with flour on the heat and cook until thickened. Remove from heat and beat in the egg. Allow to cool completely. Mix the butter with the cooled milk-flour cream, divide into 2 parts (60/40).
Add cocoa mixed with powdered sugar to the larger portion, and vanilla sugar to the smaller one. Reserve half of the chocolate cream for decoration.

Spread a layer of vanilla cream and half of the chocolate cream on the unrolled sponge cake.

Place the bananas lengthwise and roll the cake up.

Cover it with the remaining chocolate cream over the entire surface.

You can decorate it as you wish
Sprinkle with cocoa powder.
Place the roll in the refrigerator for a couple of hours before serving.
