Layers:
1 3/4 cups of flour, plus extra for dusting the pan
2 cups of sugar
3/4 cup of cocoa powder (unsweetened!)
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup of kefir
1/2 cup of vegetable oil
2 eggs at room temperature
1 tsp vanilla
1 cup of freshly brewed hot black coffee
Cream:
250 g of dark chocolate
340 g of butter (3 sticks) at room temperature
2 egg yolks, at room temperature
1 tsp vanilla
3 cups of powdered sugar.
1 tsp instant black coffee



Preheat the oven to 350F - 180C. Grease and flour 2 9-inch or 22 cm pans.
In a large bowl, mix all the dry ingredients for the layers with a mixer. In a separate bowl, mix the kefir, oil, eggs, and vanilla. Then at low speed, pour the liquid ingredients into the dry ones under the mixer blades. Next, gently pour in the hot coffee and mix on low speed. Then fold with a spatula and pour into the two pans. Bake for 35 minutes. Check with a toothpick.
Allow the layers to cool completely before starting the cream.
Melt the chocolate in a double boiler and set aside to cool. Beat the butter with a mixer for 3 minutes until light yellow. Add the yolks and vanilla and beat for another 3 minutes. Then on low speed, mix the powdered sugar with the butter for another 3-4 minutes. Dissolve the coffee in 2 tsp of boiling water. Under the mixer blades, pour the coffee and melted chocolate into the sugar mixture. Mix just until smooth. Do not beat longer! Then mix again with a spatula and immediately spread on the layers.




Comments: The layers are amazing, fluffy! The cake turns out very delicious, tender, airy, and very chocolatey. It just melts in your mouth.
