This cake requires some effort, but the result is worth it.
It is especially delicious the next day - "it just melts in your mouth"
Ingredients:
Dough:
400 g flour
150 g butter or good margarine
2 yolks (the whites will go into the cheese layer)
1 egg
2 tablespoons (heaping) powdered sugar
2 tablespoons baking powder
Layer I - poppy seed
several (6-7) tablespoons plum jam
500 g ready-made poppy mass
Layer II – cheese
500 g cream cheese
100 g butter or good margarine
5 yolks
7 whites
1 tablespoon vanilla pudding
1 tablespoon vanilla extract
1 teaspoon baking powder
powdered sugar to taste
Layer III - apple
1 packet lemon jelly
1 liter of fried apples
or
1200 g Antonovka or Ranet apples fried with added sugar
Glaze
100 g dark chocolate
about 50 ml sweet cream
Preparation:
Dough:
Process all the dough components in a food processor; divide the resulting dough into two equal parts. Place one part of the dough on a baking tray measuring 24x36 cm. Cover the second part and put it in the refrigerator.
Smooth the jam over the dough on the tray. Spread the poppy seed filling over the jam.
Note: if you do not have ready-made poppy filling, you can prepare it yourself from 300 grams of poppy seeds (boil and grind 3 times), add 2 large eggs and 100 grams of sugar; you can add dried fruits if desired.
Cheese layer:
Rub the sugar and butter together. Continuously mixing, add the yolks one by one, then the cheese; finally add the pudding mixed with baking powder. Add vanilla extract to the cheese mixture. Whip the egg whites with a small amount of salt until frothy and gently fold them into the cheese mixture, adding in small portions.
Spread the cheese mixture over the poppy seed filling.
Place the baking tray with the layers in an oven preheated to 175-180 degrees and bake for an hour. Allow to cool completely.
Remove the second part of the dough from the refrigerator and bake on a tray (24x36) until golden brown (about 30 minutes). Allow to cool.
Place the apples in a pot and heat well. Add the lemon jelly and mix well until fully dissolved. Spread the hot apples over the cheese layer (it should be completely cooled!) and immediately cover with the second part of the dough.
Cover the cake with plastic wrap and set aside until the apples are completely cool.
Break the chocolate into small pieces and melt it together with the cream in a water bath. Brush the hot glaze over the top of the cake.
