Another "Ant Hill"

Ingredients:
* 2 medium eggs
* 7 tbsp of flour
* a pinch of salt, vegetable oil for frying

* 6 tbsp of sugar
* 6 tbsp of honey
* 6 (approximately) tbsp of water
*
* raisins, poppy seeds, nuts
1. Sift the flour, add the eggs and knead the dough. Knead for about 10 minutes until completely smooth. If it sticks a little, grease your hands with vegetable oil. If it sticks a lot, add a little flour
2. Roll the dough very thinly on a surface greased with vegetable oil. VERY thinly, see photo #1 - my table is beautifully translucent, especially the dark, knife-beaten (the kids helped) islands. It rolls out quickly and easily if you do it in three passes (divide the dough into 3 parts)

3. Cut the dough into small, palm-sized pieces. For the bottom of the cake, cut a little larger, for the top you can cut smaller
4. Quickly fry in hot oil, turning once (I use a frying pan with a lot of vegetable oil), until LIGHT golden color, over medium-low heat. Use a slotted spoon to remove and place on paper towels. Be careful! They are very fragile! I place one piece on top of another in the pan, hold them with the smooth sides of forks, let the oil drain, and transfer to paper (I hope I explained clearly)

5. In a small pot, add the sugar and pour in 4 tbsp of water. Bring to a boil and without stirring, cook for a couple of minutes, until lightly caramelized, add the honey, turn off the heat and stir. Let it cool slightly. You can add a bit of lemon juice
6. Next comes the assembly. Well, here, like a constructor, we lay out our crispy pieces, drizzling each layer with syrup (if the syrup is too thick, add another spoon or two of water) and on top the next layer. The syrup, when it sets, will glue everything together. At the end, on top, sprinkle with nuts, raisins, and poppy seeds as desired. I have raisins and poppy seeds

7. Enjoy your meal!!
There won't be much dough - don't let that bother you - the ant hill will be quite large! I fry 1-2-3 pieces at a time (depending on their size), they stick together quickly, and increase in size by about twice when frying. I press them down with a fork for even golden color. The color should be slightly golden!! Don't over-fry! All tablespoons should be heaping. I do it at the edge of the table, and then easily sweep it onto a plate. The syrup should not be too runny. Pour it with warm syrup, in a thin, slow-flowing stream.
We, especially the kids, really love this ant hill! The kids don't want any creamy cakes - just this one! Of course, it's calorie-dense! And what cake is super dietetic and tasty? Do you know? I don't.
