Composition
250 g Mascarpone (Italian soft cheese, sold in boxes),
3-4 eggs,
75 g powdered sugar,
20-30 pcs. sponge fingers, boudoir or ladyfingers (this is a sponge, elongated cookie ("Ladyfingers"),
150 ml cold strong coffee (preferably espresso),
1-2 tsp Amaretto liqueur or any other coffee liqueur,
1-2 tsp plain cocoa,
a pinch of salt,
chocolate for sprinkling

* In Ukraine and Russia, I think it's not always possible to buy mascarpone or such cookies. The cheese can be replaced with thick homemade cream, and the cookies can be made from sponge cake batter: from eggs, sugar, and flour, and then dried a little. You can simply bake sponge cakes, then dry them out and soak in coffee, as done with the cookies in the recipe.

Preparation

1) Mash the mascarpone with a fork in a bowl. Separate the eggs into whites and yolks. Brew the coffee and let it cool.

2) Beat the yolks with powdered sugar until white. Then add them one spoonful at a time to the mascarpone, mixing with a mixer or whisk.

3) Whip the egg whites with a pinch of salt. And also, one spoonful at a time, add to the mascarpone with the yolks. Put the mixture in the refrigerator.

4) Meanwhile, add the liqueur to the cooled coffee and prepare the form for the tiramisu.

* For tiramisu, a rectangular form with removable sides is best (originally, tiramisu looks like a cake, and it needs to be cut). But any round or rectangular form will work, but then everyone will have to eat from one dish :) - it is quite problematic to take the tiramisu out whole. You can also do everything on a tray or baking sheet.

5) Take the mixture out of the refrigerator, cover the bottom of the form with a thin layer of cream. Then take one cookie at a time and quickly(!) dip them in the coffee, without releasing, and lay them in the form in a dense layer. The cookies get soggy very quickly! After that, they can no longer be picked up.

Thus, lay one layer.

6) Spread cream on top.

7) Then lay the second layer in the same way.

8) Spread the remaining cream on top.

9) Sprinkle cocoa on top so that there are no gaps. It is convenient to do this with a sieve. Grate chocolate on the cocoa.

The tiramisu should sit in the refrigerator overnight.
