 Soft, almost airy, with a crispy crust! You can put any filling, I really liked it with fig jam, and it will also be delicious with fresh raspberries crushed with sugar, or with custard, like the author... The author's words (with my additions) Dough: Milk - 500 ml. Eggs - 2 pcs. Butter or margarine - 125g. Sugar - 2 tbsp. + 1 tsp. Salt - 1.5 tsp. Dry yeast - 11 g (1 packet) Warm water - 0.5 cup. Flour - enough so that the dough is not too stiff but not sticky to your hands. (From this amount of ingredients, more than 40 donuts can be made, I made half the amount) Preparation: (this is how I did it) Mix milk with water, warm it slightly. Add all the sugar ...yeast. Stir and let the yeast "come alive" (for about 15 minutes). Now the yeast has "come alive," that's enough. Now we add the egg, butter (it can be at room temperature or melted), salt, and vanilla (it's not in the recipe, but I like it better with it). Beat everything thoroughly with a whisk. Now we gradually add flour and mix with a spoon. We take the dough out onto the table and knead it, adding flour. The dough should be not too soft, but not too stiff - medium. I used about 400 g of flour, as far as I remember, but I might be mistaken... Cover the dough with a towel and let it rise for 1.5 hours, until it doubles in size. If it doubles in size in an hour, that’s enough and you can proceed to making the donuts. Roll out the risen dough to a thickness of 1 cm, cut out medium-sized circles (I used a glass and they turned out large, better than something like a shot glass...), and let them rise until they double in size. Heat vegetable oil well (enough so that the donuts float in the oil without touching the bottom) in a deep skillet. Fry them on both sides until golden brown. Place the ready donuts on napkins. While the next batch of donuts is frying, simultaneously fill the ready ones. When frying, the donuts will have a white strip of dough that goes around the entire circumference. Make a cut on it with a sharp knife and place the filling. You can also leave them unfilled and simply sprinkle with powdered sugar!
