Ingredients:
    • for the dough:
    • Flour 350-500 g
    • Sugar 200 g
    • Butter 100 g
    • Honey 2 tbsp
    • Egg 2 pcs
    • Baking soda 1 tsp
 
  • for the cream:
  • Sour cream 500 g
  • Sugar 150 g

 

How to make "Medovik" cake with sour cream

    • Place softened butter, sugar, and honey in a bowl.
    • Place the bowl over a water bath, heating and stirring until the sugar is partially dissolved and the mixture becomes a uniform color. Add baking soda and keep over the water bath for another minute.
    • Remove the bowl from the water bath, add the eggs and mix quickly until smooth.
    • Gradually add the sifted flour and mix thoroughly. Put the bowl with the dough in the refrigerator for half an hour.




    • Dust the board with flour and divide the dough into 9 pieces (also dust your hands with flour).
 
  • On the back of the baking sheet (or on parchment paper), roll out each ball as thin as possible. Place a plate on top and cut around it. Prick the dough with a fork.

 

  • Bake the layer at 200 degrees for 5 minutes. Trim the edges and immediately remove the ready hot layer from the baking sheet.

 

  • Bake all the layers in this manner.

 

  • Collect the trimmings from the layers in a separate bowl.

 





  • For the cream, use the thickest sour cream. Whip with sugar using a mixer. Whip until the sugar is completely dissolved.
  • Place the first layer on a plate. Evenly spread 2-3 tablespoons of sour cream on it. Optionally, add nuts or prunes.

 

  • Cover with the second layer and stack the entire cake in a similar manner. Leave a couple of tablespoons of cream for coating the sides of the cake.

 

  • Do not coat the last layer with cream; shape the cake a bit with your hands. You can place a small weight on top.

 

  • Crumble the trimmings by hand or grind them in a blender.

 

  • Finally, coat the top layer and the sides of the cake with cream. Sprinkle the entire cake with crumbs. Place the cake in the refrigerator to soak for a couple of hours.
