I want to offer
your attention a very tasty, tender, and aromatic cake with coconut flakes. The cake "Coconut Delight" is quite easy to prepare. This cake will not only please sweet tooth lovers but also decorate any festive table. I think every hostess can manage to make it. To prepare the "Coconut Delight" cake, we will need: For the dough: condensed milk - 1 can (200 g); eggs - 2 pcs.; wheat flour - 160 g; baking powder - 12 g. For the cream: whipping cream - 350 ml; cream cheese - 350 g; coconut syrup - 150 ml (can be replaced with 100 g of powdered sugar); coconut flakes - 5 tbsp. Prepare the ingredients for the dough. Crack the eggs into a bowl suitable for whipping. Whip the eggs with a whisk. Then add the condensed milk. Whip with a whisk until homogeneous. Then sift in the flour and baking powder. Knead the dough using a whisk. The dough will be like that for pancakes. Line a baking sheet with parchment paper. Place 2-3 tablespoons of dough and shape it into a round cake. Place the baking sheet with the dough in a preheated oven and bake at 180 degrees for about 5-7 minutes. The cakes bake very quickly, so stay alert! Transfer the baked cake to the table and immediately, while hot, trim the edges. You can place a plate on top and cut off the uneven edges with a knife. I got 6 cakes with a diameter of 18 cm from this amount of dough. Prepare the ingredients for the cream. I used cream made from vegetable oils. Whip the cream until stiff peaks form. Combine the cream cheese and coconut syrup. If you don't have coconut syrup, you can use 100 grams of powdered sugar. Thoroughly mix the cream cheese and syrup. Then add the coconut flakes to the cream mixture and mix well. Fold the cream cheese-coconut mixture into the whipped cream and mix the cream on low speed until smooth. Assemble the "Coconut Delight" cake by spreading the prepared cream between all the cakes. Coat the top and sides of the cake with cream. Place the cake in the refrigerator overnight.
