*** The result is a crumbly and absolutely wonderful dough

I now prepare shortcrust pastry only this way. It turns out just great!

Preparing the dough.
Place in the bowl of a food processor (or blender with "blade" attachment) - 250 grams of flour, 120 grams of cold, cubed butter, and mix until crumbly.
Add: 2 egg yolks, a pinch of salt - mix quickly.
Add 1-2 tablespoons of ice water and mix until the dough comes together into a ball.
** If the dough does not come together - add another 1-2 tablespoons of water and blend again.
** For sweet pastries, I also add 2-3 tablespoons of powdered sugar. In this case, I reduce the flour (minus 2 tablespoons from the total amount).
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 - 60 minutes.
The shortcrust pastry is ready!

Preparing the cookies.
Roll out the chilled dough to a thickness of 2-3 millimeters (you can roll out the dough and cut cookies directly on the baking paper).
Use cookie cutters to cut out shapes.
Bake the cookies in a preheated oven at 190 degrees (adjust according to your oven), for approximately 15 minutes until golden brown.
** From this amount of ingredients, I got 2 baking trays of cookies.
If desired, the cookies can be joined with: boiled condensed milk, jam, Nutella...
