If you have kefir sitting in the fridge, do not throw it away – you can make delicious homemade gingerbread. I suggest an excellent recipe from the 90s that my mom used. The aroma from the honey was incredible. I recommend making homemade gingerbread using this simple recipe. Ingredients for homemade gingerbread with kefir: 350 ml of kefir (or buttermilk) 1 cup of sugar 2 yolks and 1 egg white 1 tbsp of honey 3 tbsp of vegetable oil 1 tsp of baking soda (not heaping) About 2 - 2.5 cups of flour For the icing: 1 egg white 3 tbsp of sugar Recipe for homemade gingerbread with kefir: 1. Whip the yolks with one egg white (separate the second egg white for the icing) and honey with sugar, then pour this mixture into the kefir and vegetable oil. Whip again slightly. 2. Gradually add the sifted flour with baking soda (no vinegar needed, the kefir will neutralize the soda) and knead a soft dough. 3. Roll out the dough to a thickness of 1 cm, cut out circles with a mold or a 100-gram glass, place them on parchment on a baking tray at a small distance from each other, and bake for 25 minutes at a temperature of 180 - 190 degrees. 4. While the gingerbread is baking, let's prepare the icing: whisk one egg white with 3 tablespoons of sugar until the sugar is completely dissolved. You don’t need to whip it to stiff peaks, just until the egg whites turn white and the sugar dissolves. 5. After 20-25 minutes, take the gingerbread out of the oven, quickly spread the whipped egg white on them (it’s very convenient to use a silicone brush for this purpose), you can do it in two layers, as I did, and back in the oven for another 10 minutes. Then take the kefir gingerbread out of the oven and transfer them to a plate. Homemade gingerbread with kefir and honey is ready and ready to eat.
