Recipe.
500g flour.
2 eggs.
75g butter.
160g warm milk.
5g quick yeast (the original recipe calls for one packet of quick dry yeast, although I strongly recommend using half the amount of yeast and letting the dough ferment longer)
60g sugar
1 teaspoon salt.
lemon zest (can be omitted)
vanilla.
Filling.
Here is cooked cranberry with sugar, spices, and a spoonful of starch.
The French recommend chocolate pudding or pieces of chocolate.
Knead the dough from the indicated ingredients. Knead for a long time, about 15 minutes. The dough will initially resemble thick oatmeal, which makes you want to splash in some more warm milk... but don’t rush. After some time the dough became more elastic and soft, yet firm.
In France, the dough ferments for 1.5 hours... mine took longer and rose about 5 times.
The finished dough is very pliable to work with, does not stick to the hands, and does not require additional flour when shaping the products...
Divide the dough into portions, shape into circles (I use 80g for one portion), let rest for about 10 minutes, then roll each portion of dough into a flat cake and shape into a rose bud.. see step-by-step photos on the French website.
Proofing, until it doubles in size.
Then brush with egg (I also sprinkled with sugar) and bake at 170°C for about 20 minutes.
It is best to bake these buns by placing them in a pan with sides, trying to arrange them so they slightly touch each other. If you want to bake individual portions of buns, it's best to place them in a mold... for example, a small cake mold. If you don't do this, the bun will rise during baking and the petals may spread apart..

to prevent the petals from falling apart during baking, you can brush the edges with egg white when forming the rose... and it would be good to use 1/4 of an apple or pear sprinkled with sugar + cinnamon, or a slice of canned peach for the filling... anything you like.
