DOUGH
1 cup of milk (200 ml)
11 g of active dry yeast
1 teaspoon of salt
2 eggs
1/3 cup of softened butter or margarine
4 cups of flour
1/2 cup of sugar
1 tablespoon of gluten
1 teaspoon of vanilla extract (can be replaced with vanilla powder or sugar)
FILLING
1/3 cup of softened butter
1 cup of brown sugar
4 tablespoons of cinnamon (preferably Cinnamon type)
GLAZE
7-8 tablespoons of softened butter
1.5 cups of powdered sugar
1/2 teaspoon of vanilla extract
1/4 cup of cream cheese (Philadelphia or any similar cream cheese)
Mix warm milk and yeast until smooth. The eggs should be warm! (not from the fridge!) Beat them separately in a bowl. Pour the beaten eggs into the main pot, add the softened butter (microwave for 3-17 seconds to soften, but do not melt it, it should not be liquid yellow), then add sugar and vanilla, and warm milk with yeast.
Bring to uniformity.
In a separate bowl, mix flour with a pinch of salt.
Add the flour to the main pot with the smooth mixture. Mix a little flour with water to get a sticky mass (to get 1 tablespoon, this will be the gluten) and add it to the dough. Add more flour, knead the dough so that it doesn't stick to your hands. Cover the dough with a towel and place it in a warm place for 1 hour.
Roll the dough on a table dusted with flour into a rectangle approximately 40 cm by 55 cm. Spread softened butter over the rolled-out dough.
Evenly sprinkle the pre-prepared mixture of cinnamon and brown sugar over the butter spread on the dough.
Now the dough needs to be rolled into a tight roll, and the tighter and neater it is, the more the product will resemble the sold Cinnabons.
It's better to divide the roll into buns using a thread (if it doesn't cut all the way, finish cutting with a ceramic knife).
Line a rectangular baking dish with parchment paper, placing the buns close to each other.
If you don’t have a baking dish, you can use a baking sheet (also lined with parchment paper). Place in an oven preheated to 160 degrees for about 20 minutes (once the buns are golden brown, they can be taken out).
Glaze:
For the cheese glaze, mix powdered sugar, vanilla, softened butter, and cheese into a smooth mass.
Brush the hot buns with the wonderful glaze!
