INGREDIENTS: ? 1 cup of your favorite jam or jelly ? 1 tsp of baking soda (can be replaced with baking powder) ? 1 cup of kefir ? 1/3 cup of sugar ? 2 eggs ? 2.5 cups of flour ? butter for greasing the pan PREPARATION: 1. In a deep bowl, mix the baking soda with the jam. The mixture will fizz, bubble, and significantly increase in volume. 2. After about 5 minutes, add the eggs, pour in the kefir, add the sugar and flour. Mix thoroughly. If you chose a more sour jam for the pie, such as blackcurrant, you can increase the amount of sugar. 3. Grease the baking pan with butter, sprinkle with breadcrumbs or flour (crushed oatmeal also works well). Pour the batter into the pan. 4. Bake the pie for about an hour at a temperature of 180 °C. Do not open the oven for the first 30 minutes; later, you can check the readiness with a wooden skewer. Just sprinkle the pie with powdered sugar and brew some fragrant tea. Delicious! It is not necessary to bake one large pie; you can pour the batter into muffin molds. Just do not fill them more than 2/3 of their volume, as the batter in this recipe rises significantly during baking.
