Spicy appetizer of eggplant with cheese

Ingredients:
1 large eggplant
sunflower oil
1-2 tomatoes
200-300 g of cheese
2 carrots
1 clove of garlic
mayonnaise

Preparation:
1. Cut the eggplant into slices and fry in sunflower oil on both sides (add salt).
2. Place the slices on a napkin to drain excess oil.
3. Grate the cheese on a fine grater. Also grate the carrot and garlic. 4. Mix everything with mayonnaise.
5. Then spread the cheese mixture on the fried eggplants, place a piece of tomato on top and arrange on a plate decorated with lettuce leaves.
