Ingredients
flour -
200 grams
cocoa - two tablespoons
sugar - 80 grams
egg - one

For the cream:
grapes - 400
grams
gelatin - 8 sheets
eggs - two pieces.

vanilla sugar - 1 packet
natural yogurt - 150 grams
cream
- 400 grams
chopped pistachios - three tablespoons
Make the dough. Mix the flour, cocoa, and sugar, quickly add the egg and chopped butter. Wrap the dough in foil and refrigerate for half an hour. Then roll out the dough into a round flatbread and place it in a greased round form (26 cm in diameter). Bake the dough in a preheated oven at 200° C for 15 minutes. Let it cool.
Yogurt cream. Wash the grapes, dry them, and separate the berries from the bunches. Cut the berries in half and remove the seeds if necessary. Soak the gelatin in cold water for 5 minutes. Mix the eggs, sugar, and vanilla sugar, and whisk over a hot water bath for 3 minutes until it reaches the consistency of a thick cream. Squeeze the gelatin and dissolve it in the warm egg cream. Let the mixture cool slightly, then add the yogurt, mix well, and place it in a cool place. As soon as the cream starts to set, fold in 300 grams of whipped egg whites and 3/4 of the grapes. Wrap the edges of the cake layer with a strip of parchment paper, spread the yogurt and grape cream on the layer, smooth the surface, and let it set in the refrigerator overnight. The next day, remove the paper and decorate the cake with the remaining whipped cream. Additionally, beautifully decorate the cake with strips of whipped cream, grapes, and pistachios. After that, refrigerate once more.
