Heat 150 g of grated chocolate over low heat in 1 tablespoon of water. Add 2 coffee cups of butter and, when it melts, whisk the mixture. Break 6 eggs and separate the yolks from the whites. Whisk the yolks with 2 coffee cups of powdered sugar until pale and incorporate them into the chocolate mixture while continuously whisking. Beat the whites into a firm foam and add them to the chocolate mixture one spoonful at a time, while also adding 3 coffee cups of flour in portions. Place the resulting mixture into a greased baking pan and bake in a moderately heated oven (20 minutes). Remove the cake from the pan and, when it cools, spread its surface with apricot jam and sprinkle with grated chocolate.
