The softest cake, very tasty, moderately sweet and not cloying. An interesting delicate sour cream glaze.
Very easy to prepare, perfect for both family tea parties and festive gatherings.
You can use any berries or fruits to your taste.
Required ingredients:
For the crust:
60 g butter
100 g cookies (savoiardi or amaretti)
100 g ground almonds
For the filling:
150 g white chocolate
600 g cream cheese
120 g sugar
1 tbsp starch
vanilla sugar
2 eggs
For the layer: 150 g jam or mashed berries with sugar
For the sour cream glaze:
400 g low-fat sour cream
40 g sugar
vanilla sugar
For decoration:
Fresh berries, chocolate.
For the cake base, melt the butter, crush the cookies. Mix the butter with the cookies and almonds, spread it on the bottom of the pan lined with paper, level it and press with a spoon. Place it in the cold for a while.

Melt the chocolate in a water bath.
Beat the cream cheese with sugar and vanilla, gradually add the starch, eggs, and melted chocolate.

Spread 2/3 of the mixture on the cake base, then carefully spread the fruit or berry layer, leaving about 4 cm from the edges. Top with the remaining cream filling. Bake in a preheated oven at 170-190°, for about 45 minutes.



The sides of the cake will bake faster, so it's better to line the pan completely with paper, so the sides of the cake are not darker when done.
After the time is up, take the cake out of the oven and let it cool for about 15-20 minutes.

For the glaze, mix sour cream with sugar and vanilla. Spread the glaze over the surface and bake the cake at the same temperature for another 7-10 minutes.

Let the cake cool and before serving, decorate with fresh berries or fruits and chocolate.
