Ingredients:
– 4 eggs;
– 30 ml of hot water;
– 150 g of sugar;
– 1 ampoule of vanilla essence;
– 200 g of flour;
– ½ packet of baking powder (5 g);
Ingredients for the cream:
– 4 eggs;
– 200 g of sugar;
– 150 ml of milk;
– 15 g of gelatin + 100 ml of cold water;
– 600 ml of sour cream or cream;
– 200 g of strawberries;
– 200 g of pineapple;
Syrup:
– pineapple juice.
For decoration:
– 200 ml of sour cream or cream;
– strawberries.
Preparation of the sponge cake:
1. Whip the egg whites with a pinch of salt, add sugar, and continue to mix until the sugar completely dissolves. Add hot water one spoon at a time, the whipped egg yolks, and finally the sifted flour with baking powder. Gently mix with a spoon. Line a baking pan with parchment paper. Bake the sponge cake in a 25 cm diameter mold at 180 degrees for about 20-25 minutes.
2. Once the sponge cake has cooled, cut it horizontally into 2 equal-sized layers.
Preparation of the cream:
3. Soak the gelatin in 100 ml of cold water for 10-15 minutes. Whisk the eggs with sugar until their volume increases three times, then add the milk. Place the mixture over low heat, stirring continuously until the cream thickens. Remove the cream from the heat, add the soaked gelatin. Cover the cream with plastic wrap and cool. As soon as the cream starts to thicken, add the whipped cream or sour cream.
4. Cut 200 g of strawberries in half and place them around the perimeter of the cake. Finely chop the remaining strawberries and pineapples, and mix them with the cream.
Decoration of the cake: ½ of the sponge soaked in pineapple syrup + cream + ½ of the soaked sponge.
5. Cover the cake with plastic wrap and refrigerate for at least 4 hours or overnight. Invert the cake onto a plate. Top with whipped cream, strawberries, and grated chocolate.
