In this dessert, the combination of raisins and coconut perfectly complements each other. The pastries are not too sweet and have a pleasant scent of vanilla and nuts. The cake is much tastier after it has absorbed the flavors of the creams. The pastry is made very quickly.
Ingredients for the layers:
– 3 eggs;
– 150 g of sugar;
– 1 vial of vanilla essence;
– 4 tbsp of honey;
– 2 tsp of baking soda;
– 1 tbsp of vinegar;
– 120 g of ground walnuts (roasted);
– 550-600 g of flour.
Ingredients for the cream:
– 6 egg yolks;
– 200 g of sugar;
– 7 tbsp of flour;
– 800 ml of milk;
– 1 vial of vanilla essence;
– 280 g of butter (80%);
– 50 g of coconut;
– 50 g of milk chocolate (grated);
– 50 g of raisins.
Preparation:
1. Soak the raisins in warm water for 3 hours.

2. Beat the eggs with sugar and vanilla essence. While continuing to beat, add honey, the baking soda extinguished with vinegar, ground walnuts (roasted), and sifted flour (550 g); if necessary, you can add more flour. Knead an elastic dough and divide it into 3 parts. Roll out the dough immediately on parchment paper, trimming off the excess with a knife. Bake three layers, measuring 24 x 32 cm. Bake the layers for about 5 minutes at 180 degrees. Be careful not to let them burn.

Preparation of the layers:
3. Beat the egg yolks with sugar, add flour and milk (little by little). Place the mixture on low heat and cook while stirring continuously until the cream thickens. Remove the cream from heat and add the vanilla essence, cover the cream with plastic wrap and let it cool.
4. Slightly beat the soft butter (at room temperature) and then add one spoonful of the cooled cream at a time. Divide the finished cream into 3 equal parts. Mix one part with soft raisins, the second part with coconut, and in the third part, grate the chocolate.
Decorating the cake: spread the 3 nut layers with one of the three creams. The order does not matter.
Place the pastry in the refrigerator. Cut with a sharp knife.
