Very tasty homemade sponge cake. The recipe deserves your attention! Use a mold with a diameter of 20 cm.
Ingredients for the dough:
- 3 eggs (room temperature)
- 1/2 cup of sugar
- 4 tablespoons of honey (if the honey is thick, then- without a heap!)
- 1 teaspoon of baking soda
- 1 cup of flour (I needed 150 g.)
For the custard:
- 1 egg
- 100 g. of sugar
- 1 tablespoon of flour
- 250 ml. of milk
- 100 g. of butter
Recipe preparation:
- Preparation of the sponge. Beat the sugar with the eggs until a fluffy, white mass is formed.
- Transfer the honey to a saucepan with a thick bottom and heat to 50 degrees.
- Add the baking soda (the mass will foam) and constantly stirring (over medium heat), bring the mixture to a dark caramel color.
- Incorporate the hot honey (one spoon at a time) into the beaten eggs with sugar, constantly stirring to prevent the eggs from curdling.
- In 2-3 additions, add the sifted flour. The dough should have a consistency similar to thick sour cream.
- Pour the dough into a mold lined with parchment paper at the bottom.
- Bake the sponge for 40 minutes at 160″ (adjust according to your oven).
- Preparation of the cream. Mix in a saucepan: eggs, sugar, milk.
- Add the flour, mix well. Heat the milk-egg mixture over medium heat, constantly stirring (don’t forget about the «corners» of the pot), until thickened.
- Pour the custard base into a bowl, cover with plastic wrap, and let it cool completely.
- Beat the butter at room temperature until white, combine with the cooled custard base and beat again.
- As a result, you should get a smooth cream of uniform texture.
- Cut the cooled sponge into three layers, spread with cream, and decorate with crumbs. Enjoy your tea!
