For the dough.
Milk 1 cup
Butter 100 g
Egg 1 pc
Sugar 1 tablespoon
Salt 1/2 teaspoon
Dry yeast 1 packet
Flour less than 1 kilogram
Filling
Cabbage 1/4 small head
Salt to taste
Carrot 1 piece
Eggs 3 pcs
Vegetable oil for frying
Preparation.
Dissolve the yeast in warm milk, adding
sugar. Let it rise.
In the meantime, melt the butter and add
the egg.
Mix, add salt and start kneading the
dough. Gradually add flour. Add the yeast. The salt should not come into contact
with the yeast, as it will stop their growth, so mix the salt well into the dough
first.
When the dough can be handled, knead it
on the board. It's easier that way.
After kneading the dough well, return it
to the pot for rising.
Now let's prepare the filling. Chop the
cabbage finely.
Fry it until translucent, add grated
carrot, and salt to taste.
Chop the hard-boiled eggs.
Add them to the filling and mix until
homogeneous.
Meanwhile, the dough has risen. Let's start
shaping the pies.
For the rasstegai, do not close the pie
completely, leave a small opening on top.
Brush the prepared pies with egg,
bake in the oven at 190°-200° for about 30 minutes.
