Baklava

Ingredients

*Dough*
-180 g of butter
-3 egg yolks
-1 cup of sour cream (my cup volume is 250 ml)
-about 3 cups of flour
-10 g of vanilla sugar
-10 g of baking powder
*Filling*
-300 g of walnuts
-4 egg whites
-300 g of sugar
*Additionally*
-80 g of walnut halves
-1 egg yolk
-50 g of butter
-5 tbsp of honey

Preparation

1. For the dough, pour the flour into a bowl and grate the butter. Then rub everything together by hand into crumbs.

Add the vanilla sugar and baking powder, mix well.

3. Add the egg yolks and sour cream, knead a soft, slightly sticky dough.

4. Divide the dough into 5 parts - 2 larger and 3 smaller.

5. Cover the dough with plastic wrap and refrigerate for 30-40 minutes.

6. For the filling, chop the walnuts in a blender into medium crumbs.

Add sugar and egg whites, mix well.

 

8. Roll out the larger part thinly and spread it on the bottom of the baking dish. My baking tray is 20 by 30 cm, the bottom is lined with parchment paper.

9. Spread a quarter of the filling on top.

10. Next, roll out a small piece of dough.

11. Place the next part of the filling. Repeat until the end.

12. Use the blunt side of a knife to fold and seal the edges of the dough.

13. Brush the top of the baklava with egg yolk and cut the top dough into diamonds with a very sharp knife.

14. Place the walnut halves on top.

Bake the baklava in a preheated oven at 180°C for about 40 minutes.

15. Then cut the hot baklava, completely cutting through all layers.

16. Combine the honey with melted butter and generously coat the baklava with this glaze.

Put it back in the oven for another 5 minutes.

That’s it! Let the baklava cool completely for about 8-10 hours and then enjoy its taste!
