Ingredients:
Dough:
milk - 250ml
sugar - 2 tbsp
dry yeast - 1 packet (11g)
butter - 125g (melted)
flour - 350-400g
salt - 1/2 tsp

Filling:
cottage cheese - 250g
herbs - 100g (I used green onions and dill)
boiled chicken fillet - 1 piece (200-250g)
cheese - 100g
salt, black ground pepper
semolina - 1 tbsp

Preparation:
1. Prepare the dough. For this, mix 0.5 cup of warm water (or milk) + 1 tbsp of flour + 1 tbsp of sugar + yeast in a bowl. Leave in a warm place for 7-10 minutes until the mixture rises.
2. Sift the flour into a deep bowl, pour in the warm milk, melted butter, and the yeast mixture, add sugar and salt. Place the dough in a warm place for 1-1.5 hours until it doubles in volume, punch down and leave for another rise (about another 30-40 minutes).
3. Divide the dough into 2 parts, roll each into a circle about 1 cm thick and place on a baking tray lined with parchment paper (the circles are about 28 cm in diameter, my tray can only fit 1, so I baked in 2 batches).
4. Prepare the filling. Finely chop the herbs, mix with the cottage cheese, add salt and black ground pepper. Shred the chicken fillet into fibers. Grate the cheese on a coarse grater.
5. Sprinkle the dough circle with semolina (this is to protect the dough from becoming soggy). Spread the cottage cheese with herbs over the surface of the dough, then add the chicken fillet and top with grated cheese.
6. Bake in a preheated oven at 200°C for 20-25 minutes until golden brown.
