
I have been preparing zucchini (this year also cucumbers) using this recipe for several years, the source of which is Max's mom, for which I am very grateful
Ingredients: (for 4 pcs. 1L jars)
3kg zucchini
2L water
1 cup (200g) sugar without a heap
3 tbsp. heaping salt
250g 9% vinegar
greens (dill, horseradish leaves)
4 cloves of garlic (I put this amount in a 1L jar)
1 tsp. black peppercorns
bay leaves 6-8 pcs.
Preparation:
1) Wash the zucchini, cut into slices.
2) Wash the greens, peel the garlic and place in sterilized jars.
3) Prepare the marinade:
- In a large pot, pour in the water, add salt, sugar, bay leaves, black pepper and bring to a boil;
- pour in the vinegar, bring to a boil.
4) Immerse the zucchini in the boiling marinade, cover with a lid, keep on the heat for 5-7 minutes (I keep it for 5 minutes). Stir occasionally with a spoon to "bathe" all the zucchini. Turn off.
5) Distribute the hot zucchini into the prepared jars with a spoon.
6) Bring the marinade to a boil, pour it over the zucchini and seal.
7) Turn the jars upside down, wrap them until completely cool.
