Preparation:
- To make toffees, take equal parts of sour cream and sugar, and a little butter. If you want to make more toffees, increase the portion.
- In a saucepan, combine sour cream and sugar. Since this needs to be cooked for a long time, it’s better to use a stainless steel saucepan, not an enamel one. Place it over medium heat, bringing it to a boil while stirring constantly.
- At first, the mixture will have small bubbles. You need to stir constantly and not leave the stove.
- After a while, the mixture will resemble condensed milk. Do not stop stirring, especially work the bottom thoroughly.
- Then the mixture will change color and become thick and creamy, which means the toffees will be ready soon. I wanted to achieve a darker color, so I continued to cook the toffees. Stirring becomes more difficult, but you need to increase the intensity.
- And only when the color completely satisfied me, I removed the toffees from the heat and added the butter. The butter needs to be thoroughly mixed into the mixture.
- This is the thick toffee mixture I ended up with. It needs to be quickly poured into molds or onto a flat surface. You can grease the molds and the surface with butter beforehand.
- I used a silicone mold for candies and a glass baking dish. You can immediately make cuts with a wet knife on the surface to make it easier to separate the toffees into pieces later. Leave the toffees to set for a while.
