Ingredients:

  • Butter 30 g
  • Sugar 220 g
  • Sour cream 220 g
  • Preparation:

    1. To make toffees, take equal parts of sour cream and sugar, and a little butter. If you want to make more toffees, increase the portion.
    2. In a saucepan, combine sour cream and sugar. Since this needs to be cooked for a long time, it’s better to use a stainless steel saucepan, not an enamel one. Place it over medium heat, bringing it to a boil while stirring constantly.
    3. At first, the mixture will have small bubbles. You need to stir constantly and not leave the stove.
    4. After a while, the mixture will resemble condensed milk. Do not stop stirring, especially work the bottom thoroughly.
    5. Then the mixture will change color and become thick and creamy, which means the toffees will be ready soon. I wanted to achieve a darker color, so I continued to cook the toffees. Stirring becomes more difficult, but you need to increase the intensity.
    6. And only when the color completely satisfied me, I removed the toffees from the heat and added the butter. The butter needs to be thoroughly mixed into the mixture.
    7. This is the thick toffee mixture I ended up with. It needs to be quickly poured into molds or onto a flat surface. You can grease the molds and the surface with butter beforehand.
    8. I used a silicone mold for candies and a glass baking dish. You can immediately make cuts with a wet knife on the surface to make it easier to separate the toffees into pieces later. Leave the toffees to set for a while.
