Potatoes stuffed and baked in bacon.http://klubok.work/4/81/4022/Klubok

The filling can be anything you want - meat, vegetable, or even fish.

- a few potatoes
- 500 g of minced meat
- 100 g of cheese
- parsley
- green onion
- a pack of bacon
- vegetable oil
- a small onion

Boil the potatoes in their skins until half-cooked for about 10-12 minutes. Drain the water, let them cool, and peel.
Then cut the potatoes in half (do not mix up the halves of different potatoes) and prepare them for stuffing, carefully removing the centers of the halves (the removed part will be useful for patties - see below).
It is easier to remove the center with a melon baller (a hemispherical spoon with sharp edges), but you can also use a knife, although it is much more troublesome.
Or you can sacrifice one stainless steel teaspoon and sharpen its edges.
While the potatoes were boiling, we sautéed the minced meat in vegetable oil. During the frying process, we salted and peppered the minced meat and added finely chopped small onion.
Then we finished frying until cooked and cooled it down.
(We will set aside part of the sautéed minced meat for the patties - see the end of the recipe.)
Mix the minced meat with grated cheese and herbs.
Take a pack of sliced bacon.
Stuff the potato halves, fold them together, wrap them tightly with bacon on top, and secure with a toothpick.
Place the stuffed potatoes on a baking sheet greased with vegetable oil, and bake in a preheated oven for about 30 minutes at a temperature of 180-200 degrees C.
Serve hot.
Serve sour cream, tomato or any other sauce, chopped herbs, and suitable drinks separately.
While the potatoes are baking, mix the potato scraps with the remaining sautéed filling and herbs, mash well, form patties (you can place a piece of butter in the middle of each patty), roll them first in an egg wash, then coat them in breadcrumbs (or in fresh white bread cut into small thin strips), lightly fry on both sides in vegetable oil, and eat immediately so as not to be bored waiting for the potatoes to cook in the oven.
