- 3 large potatoes
- 5 long strips of bacon (from store-bought slices)
- 0.5 onion
- a pinch of wheat and corn flour
- 1 yolk
- 50 ml cream
- 1 tbsp each of vegetable and butter oil
- parsley
- white pepper
- salt
        
Thoroughly wash the potatoes (do not peel), cut them in half lengthwise, rub with salt and oil, score the flesh side in a crosshatch pattern and bake in the oven at 200 degrees Celsius for 40 minutes.
Meanwhile, cut 6 strips of bacon the same length as the potatoes and set aside.
Cut the remaining bacon into small strips, fry until crispy over medium heat, remove and set aside.
Peel the onion, slice thinly, salt, sprinkle with flour, mix, and fry over high heat in oil until lightly browned, set aside.
Remove the potatoes from the oven, carefully scoop out the hot potato flesh with a spoon or a scoop (trying not to damage the skin to create potato "boats"). While hot, mash it, mixing with cream, fried bacon, yolk, finely chopped parsley, salt, and pepper. Fill the potato "boats" with this mixture.
Top each "boat" with fried onion, a slice of bacon, and bake in the oven for 15 minutes at the same temperature. Then, for extra crispness, you can place them under the grill for a few minutes.
Serve with herbs and salad.
