Raw egg – one piece
Milk — 100 milliliters
Bread (wheat) — 100 grams
Carrot — one piece
Fish fillet (boneless) — 800 grams
Onion (large) — one piece
Filling:
Black pepper
Salt
Vegetable oil – three tablespoons + for frying
Bread crumbs (or cornmeal)
Green onion — 40 grams
Boiled eggs – two pieces
Mushrooms — 300 grams Dill — 40 grams
Rinse the fish fillet thoroughly, slightly dry it with a paper towel. Cut into pieces and pass everything through a meat grinder or chop in a blender. Carefully place the minced fish into a bowl. Gently cut the crust off the bread, soak it in cold milk, then lightly squeeze it. Add grated carrot (coarsely grated), half of the chopped onion (finely chopped), raw egg, and bread to the bowl with the fish. Add a little salt and pepper and knead the filling well. For the filling, chop the mushrooms into cubes. In a skillet, heat vegetable oil (3-4 tablespoons), fry the remaining half of the onion, add the mushrooms and fry everything for about 5-8 minutes. The hard-boiled eggs should be finely chopped. The green onion and dill should be finely chopped. Mix the fried mushrooms well with the herbs, eggs, add a little salt and pepper. From the filling, form patties, place the prepared filling in the center of each patty and shape them into cutlets. Then carefully roll them in breadcrumbs and fry until cooked.
